Shiitake (Lentinula edodes)
An edible mushroom widely used in Asian cuisine (also spelled “shiitake”). It contains beta-glucans (notably lentinan) and the alkaloid eritadenine, as well as B vitamins and minerals. UV-exposed shiitake can be a dietary source of vitamin D2. As a conventional food, shiitake is generally recognized as safe when properly cooked.
